Dr. Lustig from UCLA Endocrinology has written a book “Fat Chance: Beating the Odds Against Sugar, Processed Food, Obesity and Disease.” He writes about the role of fructose in illnesses such as Obesity, Metabolic Syndrome, Diabetes, Coronary Heart Disease and Strokes. The process is linked to how fructose generates free radicals which can in turn generate fatty deposition into organs. Multiple articles have linked consumption of fructose to non-alcoholic fatty liver as well. Lowering fructose ( as well as high fructose corn syrup) in diets have decreased cardiometabolic risk.
Some caveats, fructose in fruits is safe in moderate amounts and the book’s focus on fructose does not mean that other sugars are safe. It is only part of the problem.
